Where do I edit the CSS to widen the drop down for the product categories widget so it takes up the entire sidebar? – Screenshot attached. Thanks in advance.

Hi,
Please put this css at Admin -> Theme options -> Custom CSS
.widget select{width:100%} . This code will fix your issue .
