Hello

I have no prior knowledge of WordPress or Atelier (no programming either). I am attempting to create an e-commerce website. Would you recommend that i start from scratch or amend the demo?

It would likely be easier for you to import the demo and used that as a reference.

Import the demo and amend it would be my advise, you will get a feel for how all the Page Builder elements/Meta Options can be used together.

Would you recommend deleting all the demo items once i have finished?

No, that would delete all the content you add.

For example if I customise Home: Landing, then I could delete all the other home pages such as Home: Tiles Tiles Tiles?

Yes, you could do that as long as you are not using them.
