Hi,

1) I have found “Select options” in several files but, strange enough, cannot figure out which one is responsible for the “Select options” hover text overlay on products page: http://34.250.245.156/shop

add-to-cart.php
class-wc-product-variable.php
uplift.pot

2) What does the uplift.pot file do? If I want to modify the English in the theme, is this where to do it?

That text should be changed in the Uplift translation file.

the Pot is a template so you can use to create any new translation file
