In case you misunderstood, I can indeed add and save custom fields, the problem is that the data that users enter into the custom fields is not saved.
Ok, here is another test install. You can do what you like with it as it is only temporary.

Hi Kyle – I was away on holidays and this seems to have gotten overlooked.
Sorry, but doesn’t the fact that the field data saves with any theme other than ATELIER indicate that the problem has something to do with the theme?
It couldn’t be any other conflict as turning off all plugins does not solve the problem, but switching to twentyfourteen theme does, as described in my original post.
I hope you can help, an example of the field data not being saved can be found here: https://www.celticimpressions.com/product/gift-certificates/ . In this example I am not even using the aforementioned “Woo-Commerce Custom Fields & Product Add-ons” Which shows that text-field data in general is not being saved on product pages (in this case the gift-voucher amount is not being saved which prevents the customer from adding to cart)

Ok. Thanks for the quick reply – Can you direct me to where I could find the php files for this so that I can attempt to create a solution for now? I have found this but assume there are more related files.

Just to update – I have changed the categories to parent ctegories so that isn;t the problem.
Additionally, and important for us, the “random” parameter is not working there either
