When choosing a variabel product the add to shopping bag icon/text doesnt show.

Creating a ‘clean’ new product doesn’t help, gives the same result: your theme no add to cart butten, worpress theme: no problem

Do you have a child theme active? Please can you try disabling any other plugins you have active? Must be something unique to your install conflicting here.

I didn’t have a child theme active, activating it doesn’t help.
The only plugin that is activated, is woo commerce. I already turned everything of as your colleague suggested.
