You mean the add to cart button? You can set your site to catalog mode, where prices and buying online is not available. It is simply an online catalog. Yo do this in Theme Options > WooCommerce Options

I know, but the website will have both products you can buy, products you have to require prices for and it is the latter i would like not to display.

I’m not sure how you would do that, you’re best asking woocommerce
