final question on this (for the moment!), is it possible to use this type of layout for the shop and category pages, whilst keeping the Tilt-style layout we have on the live homepage (mexart.co.uk)?

I don’t see why not, just amend the settings in Theme Options => WooCommerce Options => Shop Page to be the same as that Page Builder product assets.

but in that case the image ratios need to be different on the shop page to the home page. Is it possible to do that?

For that you would need to work with a develope, it would involve a large amount of customisation to the Page Builder products asset and the default shop page layout.
