Override theme 'excerpt' feature

Is there a way that I can use the WordPress excerpt so it overrides the themes excerpt?

Id like to add an ‘read more’ to some of my posts with many pictures. It doesnt work…

Like in this post, I want to excerpt about 6 photos in so they are not all in the main blog feed. Im trying to reduce load times.

Im just looking to ‘excerpt’ only some posts not the whole blog using the themes features. Like in this post I like to add a ‘read more’ after about 5-6 photos so they open the post to view the rest. having 50+ photos showing is killing load times on a mobile device even with cache plugins.
