hi there,
how can I change the main icon for the mobile menu which is displayed in the header,
right now it´s ss-rows, but I want another Icon for it, in which file must I change it?

You can edit icon code in sf-header.php at /wp-content/themes/dante/includes/ .

What if I put the entire function in functions.php in order to save this edit from future major releases? Will the icon be safe?

Yes you can place the entire function sf_logo() inside the childtheme functions.php
