I’m trying to edit the sf-header.php file. Do I have to create the (3) folders in my root (/includes/swift-framework/sf-content-display/), copy the sf-header.php file into the last folder, and edit it?

Hi

No, this format does not work with framework files. You need to copy the function for the sf-header, it will start with:
```
/* HEADER
	================================================== */
	if (!function_exists('sf_header')) {
	function sf_header() {
```
You need to copy the whole function and paste in the functions.php file in your child theme
