We need to be able to have unique product images separate from the thumbnails that show up in the store listings. Or, put another way, we want the featured images to NOT be included in the slide show that appears for a product when viewing the single product listing.

Is this possible by default? Looking at woocommerce, it looks like some people are using WP Post Thumbnails to do this – does the theme have any kind of support for this?

This is not currently available, however it has been requested therefore I have forwarded it to the developer and it may be a feature that we add in a future update.
