It looks like I only have the option to have a masonry blog format, whereas if I set the Front page to show the latest posts it’s more of a traditional blog format.

Can I adjust the Blog template to follow this format instead of the masonry layout?

You can create your blog page, then set it as the posts page in Reading settings. This will show the archive layout
