I want to use the mason/tiled and sortable post style of the portfolio, can I edit these to also be regular posts?

Hi,

Portfolios have different functionality, it can’t be changed.

But you can use the Masonry-style for a Blog element – just add a Blog element from the Page Builder, edit it and select the display type to be Masonry.
