  How can I move the logo to a different position on certain pages?
  For example, I want the logo centered above the nav on the shop (which I already have), and the logo to the left of the nav on the other pages?

  Unfortunately this is not possible, the only changes you can make to the header per page is css changes, and this would be using the different headers on different pages, sorry.
