  Validation of required fields are not working.
  I’ve tried turning on the one page checkout as suggested by the other threads, however it doesn’t seem to validate the contents of the fields, just proceeds to payment.

  This is likely due to a plugin, can you try disabling any plugins you have enabled apart from WooCommerce, and then trying it?
