When I attempt to update either the location or type of sidebar for woocommerce pages/products they don’t seem to be taking effect.

Hi,

You setting “Default Product Sidebar Config” is set to “No Sidebars”. Can you change that to left, right or both in Theme Options => WooCommerce Options.
