For example: when I search in “Pages” for “Test”, it instead returns me a list of POSTS. For some reason any back end searching is ONLY searching through posts. If I switch to the twenty twelve theme then there aren’t any more searching issues.

Tested this here, and works as expected. Could you try re-uploading the theme? Any plugins that may be conflicting?
